Ingredients:
Filling:
2 1/2 pounds sweet potatoes
1/2 cup firmly packed brown sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 large egg
2 tablespoons butter, softened
1/2 cup 2% reduced-fat milk
Vegetable cooking spray
Topping:
1 tablespoon brown sugar
1 tablespoon melted butter
1 1/4 cups miniature marshmallows
1 1/4 cups cereal, crushed
1/4 cup chopped pecans
Start by cooking the sweet potatoes in the oven at 400 degrees for about an hour. Once the potatoes have cooked until tender, let the potatoes cool. Then remove the skins and mash.
