The perfect gluten free pumpkin apple bread recipe for fall!
Fall is in the air! It’s time to bring it to your table, too. While we know you’re likely anticipating doing that on Thanksgiving, we also know that meal prep for the holiday is a lot of work.
We want to help you enjoy fall flavors without the hassle, so we’re sharing this delicious, easy, and gluten-free recipe for pumpkin apple bread! To make it, you’ll need:
- 3 cups of gluten-free flour
- 2 tablespoons of coconut flour
- 2 teaspoons of baking soda
- 1 ½ teaspoons of salt
- 1 tablespoon of apple pie spice
- 2 cups of coconut sugar
- 1 15-ounce can of pumpkin puree
- ½ cup of maple syrup
- 4 eggs
- ½ cup of melted coconut oil
- ½ cup of apple cider
- ½ cup of plain greek yogurt
- 2 cups of apples, peeled, cored, and diced
Preheat your oven to 375 degrees F. Grease two loaf pans.
In a large mixing bowl, stir together the flours, baking soda, salt, apple pie spice, and sugar. In another bowl, combine the pumpkin puree, maple syrup, eggs, oil, cider, and yogurt.
Slowly add the dry mixture to the wet, stirring just until combined. Fold in the apples.
Split the batter between your two loaf pans, smoothing the tops. Bake until a toothpick comes out clean (between 60 and 75 minutes).
Let cool, then slice and enjoy!
