Heart Healthy Recipe For American Heart Month
Whip Up This Sesame Shrimp Salad To Serve Your Heart You have likely been bombarded with heart-shaped candies, cards, and other items in preparation for Valentine’s Day. Let these hearts serve to turn your attention to the fact that February is American Heart Month. This month is intended to bring awareness to the fact that cardiovascular disease—the number one killer of women and men in the United States—is largely preventable with healthy lifestyle. To help you keep your heart healthy, try this delicious sesame shrimp salad. To make it, you will need:
  • 1 tablespoon of sugar
  • 1 tablespoon of water
  • 3 tablespoons of fresh lime juice
  • 1 minced garlic clove
  • 1.5 teaspoons of fish sauce
  • 2 teaspoons of chili garlic sauce
  • 1/2 teaspoon of salt
  • 1 tablespoon of orange marmalade
  • 2 teaspoons of dark sesame oil
  • 24 large (1 pound) peeled and deveined shrimp
  • 5 cups of shredded napa cabbage
  • 1.5 cups of shredded carrot
  • 1/3 cup of chopped fresh cilantro
  • 1.5 cups of trimmed watercress leaves
  • 1/3 cup of chopped fresh mint
  • 2 tablespoons of toasted sesame seeds
Mix sugar with water, 2 tablespoons of lime juice, and garlic in a small, microwaveable bowl. Cover with plastic wrap and microwave until the sugar dissolves (about 40 seconds). Let cool, then add fish sauce, 1 teaspoon of chili garlic sauce, and ¼ teaspoon of salt. Whisk together remaining lime juice, remaining chili garlic sauce, remaining salt, marmalade and one teaspoon of oil in a large bowl. Add the shrimp and coat them. Marinate them in the refrigerator for fifteen minutes, stirring regularly to keep coated. Heat the remaining oil in a large nonstick skillet. Cook the shrimp over medium high in the marinade until done (about 3.5 minutes per side). Toss cabbage with the remaining ingredients and the sugar/fish sauce mixture.
