Ingredients:
1/2 cups all-purpose flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground dried ginger
1/4 cup molasses
1 egg
1/2 teaspoon vanilla extract
1 ½ cups water
Start by making the batter. Combine the flour, baking soda, baking powder, salt, cinnamon, and ginger in a large mixing bowl. Ensure that the dry ingredients are thoroughly mixed. In a separate bowl combine the molasses, egg, and vanilla. Whisk together until mixed. Stir in the dry mixture into the wet mixture to make the batter. Stir until most of the lumps are gone.
Heat a griddle or large frying pan with a little oil. Ladle batter onto the griddle in medium circles. Let the batter cook until bubbles form, then flip to cook on the other side.
