Perfect Parmesan Roasted Potatoes
Ingredients
- 3 pounds red potatoes, halved
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/3 cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 2 tablespoons chopped parsley leaves
Directions
- Preheat oven to 400°F.
- Lightly oil a backing sheet.
- Place halved potatoes in a single layer on the prepared baking sheet. Add in olive oil, garlic, thyme, oregano, basil, parmesan, and salt and pepper to taste. Gently toss everything together to combine.
- Place baking sheet into oven and bake for 25-30 minutes, or until golden brown and crispy. Remove from the over and toss with butter until melted.
- Garnish with fresh parsley and serve immediately.
Roasted Garlic Bacon Brussel Sprouts
Ingredients
- 1 tablespoon honey
- 3 tablespoons balsamic vinegar, divided
- 2 pounds brussels sprouts, halved
- 1 tablespoon olive oil
- 4 slices bacon, diced
- 4 cloves garlic, minced
- Kosher salt and freshly ground black pepper, to taste
Directions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- In a small bowl, whisk together honey and 1 tablespoon balsamic vinegar; set aside.
- Place brussels sprouts in a single layer onto the prepared baking sheet. Add remaining 2 tablespoons balsamic vinegar, olive oil, bacon and garlic; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 12-14 minutes, or until tender. Stir in honey mixture.
- Serve immediately.
East Cranberry-Orange Sauce
Ingredients
- ¼ cup freshly squeezed orange juice.
- Zest of 1 orange.
- ½ cup sugar
- 1 (12-ounce) bag of fresh cranberries
- ¾ cup water
Directions
- In a medium saucepan, combine orange juice, orange zest, sugar and water. Cook over medium heat stirring occasionally until the sugar is dissolved.
- Stir in cranberries and bring to a boil. Reduce the heat and let simmer until the sauce has thickened, about 5 minutes.
- Let cool completely before serving.
