Warm Spring Salad Recipe

Ingredients:
- Uncooked quinoa – 1 cup
- Extra virgin olive oil – ½ tbsp
- Leek – 1, sliced into round pieces
- Asparagus – 1 bunch, edges chopped into small pieces
- Strawberries – 1 cup, diced
- Garlic cloves – 2, minced
- Peas - 3/4 cup
- Fresh parsley – 1 cup, freshly chopped
- Sea salt and pepper to taste
- Water or vegetable broth – 1.5 cups
For dressing:
- Extra virgin olive oil – 2-3 tbsp
- Lemon juice – 3 tbsp
- Maple syrup – ½ tbsp
- Lemon zest – Optional
Method:
- Rinse quinoa thoroughly, strain, and place it into a medium-sized pan. Add water or vegetable broth and bring to a boil.
- Reduce the flame and cover the pan to let the quinoa cool for about 15-minutes or until the water is absorbed.
- Turn off the gas and leave the pan covered for 5 minutes.
