Make your school mornings easier with this quick recipe for BLT pinwheels.
We know just how crazy getting the kids back to school can be. The morning rush compounds with increased busyness in the evenings thanks to extracurricular activities, and you and your kids are probably running pedal to the metal right now.
Fortunately, you can do some things to save yourself precious minutes in the day. For example, easy school lunch recipes that you can make while dinner is in the oven make the next morning that much easier. Here’s one of our favorites: a back to school lunch recipe for BLT pinwheels you and your kids are sure to love!
To make it, you’ll need:
- ¼ cup of sun dried tomatoes, finely chopped
- 4 ounces of cream cheese at room temperature
- ½ cup of light mayonnaise
- 6 slices of bacon or turkey bacon, cooked and crumbled
- 3 9-inch spinach or tomato tortillas
- 1 cup of plum tomatoes, chopped
- 1 ½ cups of romaine lettuce, chopped
In a mixing bowl, combine the sun dried tomatoes, cream cheese, and mayo. Add the bacon, mixing gently to combine without breaking down the bacon.
Spread this mixture over your tortillas, sprinkling each one with the chopped plum tomatoes and romaine. Roll each tortilla a tight log and seal in plastic wrap.
In the morning, pull out the logs and slice them with serrated knife. Lunch for the kids, quick and easy!
